The coffee Supremo Colombian Coffee is an exciting and unexpected addition to Kaito’s yellow selection. The roasting team had originally planned another coffee coming from a different region but after our first sip, we were convinced that the Supremo, with its deliciously nutty and juicy flavors, was the right choice. Nariño is home to the top four coffees from this year’s cup of excellence of Colombia. When tasting the Supremo, we understand what all the excitement about Nariño is about.

The Region

Renown for its sweetness and balance, this bean, of the Caturra varietal is given the title of Supremo, which designates Colombian beans of the biggest size and quality.

The Supremo Colombian bean comes from the province of Nariño which is situated in the south-west of Colombia, near Ecuador. This province is one of the regions around the world, that is best known for its coffee harvesting due to a number of unique geographical characteristics.

With an average altitude of 2100m, Nariño allows the bean to grow at a lower temperature, which in turn, allows it to reach maturity at a slower rate than other regions. It is because of this additional time, that the coffee has the opportunity to reach a level of sweetness that is out of the ordinary.

Nariño is also surrounded by twelve different volcanoes, some of which are still active to this day. This volcanic activity releases ash which contains minerals that feed the coffee plant, producing a more complex profile of aromas, flavors and acidity.

The structure of volcanic soil also has a low density and stable composition which permits it to efficiently retain water. The porous soil is also very permeable, which allows the roots to grow in depth whilst offering good drainage to avoid rot.

The volcanic terroir, as well as the perfect amounts of rain received in Nariño are the perfect recipe for a delicious coffee with a complex and nuanced flavor profile.
